Frozen Food

Touchstone personnel have designed and developed frozen confections from concept to production to introduction into the marketplace.

The following examples illustrate some of our contributions to this business sector:

  • The brine solution used to freeze water-ice confections in their stainless steel molds is not kept sterile. Leaks in the molds can result in contamination of the individual products. A small manufacturer utilized a colorful dye which would discolor the product should a leak occur. After a number of failures in relatively new molds, Touchstone engineers were brought in to evaluate the cause. It was thought that that the stainless steel alloy was appropriate, but an investigation using the scanning electron microscope (SEM) found inclusions in the stainless steel which provided a location for pitting corrosion initiation. After showing Touchstone’s report to the mold manufacturer, all suspect molds were replaced at no cost.
  • Touchstone personnel have designed and developed frozen confections from concept to production to introduction into the marketplace.
  • Touchstone has twice developed complete quality control systems for ice cream and frozen novelty plants.
  • Touchstone assisted an ice cream company through an FDA Recall due to a potential Lysteria contamination. Touchstone worked with plant and Government personnel and finally re-qualified the products in question.
